This research area focuses on analyzing food markets, with a particular emphasis on consumer behavior, policy development, and their interplay. It addresses key challenges related to food sustainability, consumer preferences, and the development of effective policies to improve market dynamics and environmental outcomes. By integrating insights from economic incentives and psychological mechanisms, the research provides a deeper understanding of consumer behavior in sustainable food choices. 

    Projects

    • Sustainable Eaters - Consumers in a sustainable Norwegian food system. Consumers play a crucial role in building a sustainable food system. Sustainable Eaters advances scientific research and industry innovation to drive behavioral change. Through interdisciplinary collaboration, the project explores consumer choices, value chain impacts, and practical solutions to reduce food waste and plastic use while promoting health- and climate-conscious decisions. 

    • Incentives for Measures for Food system Transition (VOM) VOM aims to support a shift towards a sustainable, low-emission food system by identifying potential changes in demand, production, and innovation, and the incentives needed to overcome barriers. The project will investigate plant-based production, analyze drivers of consumption choices, explore sustainable business innovations, and assess the impacts of food system transitions. 

    • SEA-CYCLE: Sustainable aquaculture industry waste valorization through recycling. The project aims at comparing identified novel industrial scale aquaculture sludge and wastewater treatment project alternatives, including an economic analysis considering environmental and ecosystem service costs and benefits.  Lead by Nazli Pelin Kocatürk Schumacher (Realtek, NMBU).
