Product innovation:
In this workshop, Richard Nystad from Flowfood gives us a ride through the food innovation process, with hands-on examples and product samples. You will get insight into the ingredients and process behind the next generation of sustainable and delicious plant-based products.

Food system transformation game:
In this workshop, the gamechanger John Köckert  walks us through the "FOODURE" game. This is a "serious game” used in education, industry and organizations to facilitate experiential learning, skill development, scenario simulation, multi-stakeholder dialogue and collaboration.

Circular business models:
In this workshop, Thore Larsgård from NMBU's bioeconomy programme introduces us to circular business models, and puts it in the context of alternative proteins. We will brainstorm ideas together, map them onto a business model canvas, and discuss strategies to go from idea to reality.

Mapping food systems:
In this workshop, Caroline Karlsson from NMBU's Sustainable Food Systems arena and August Aalstad helps us visualize food systems and the protein transition through mapping. Here you will use handy templates (the Multi-Level Perspective) to map the current system, key drivers of change, niche innovations, possible futures, and how we could facilitate a system transition.
